Divine Creamy Chicken & Avo Pasta

Last night I made this pasta, I seem to make it about once a month or so, It's Mark's favourite and the pasta he requests it the most. I adjusted the original recipe I found to make it Gluten free and I added in some feta. Don't you just love the combination of feta and avo? Or  if you're not an Avo fan the Creamy Chicken is yummy all by its self too.



INGREDIENTS:
 serves 2

250ml cream
2 chicken breasts cut into strips
1 chicken stock cube
1 diced onion
some butter for frying the onion
pasta for 2 people
1 whole avo
feta

Fry up the onion and partially cook the chicken strips,season to your liking
Break up the stock cube into the pan and add in the cream.
Simmer gently until the sauce thickens and the chicken is fully cooked. If it needs some help to thicken stir in some corn flour.
Cook the pasta according to the package instructions.
Pour the sauce over the cooked pasta, top with sliced/diced avo and feta.

This truly is the YUMMIEST pasta ever!

Sweet n Sour Chicken Pizza

Hi again!

We love to have Pizza night! Pizza night for us means, shopping for what ever toppings grab us, coming home, prepping the bases- In Mark's case it's ready made un-pasted pizza bases.For me it means buying a pack of  Gluten Free Crispy Pizza Pre Mix by Nature's Choice

One of  our favourites is: Sweet n Sour Chicken Pizza.




Ingredients/ Toppings:
* Greenpepper
* Mushrooms
* Onions
* Pineapple pieces
* Chicken pieces pre cooked spiced with Chinese 5 Spice ( I got mine at Spar in the World Foods section)
* Cheese



* and Homemade Sweet n Sour Sauce.
Ingredients:
* 1/2 cup Soya Sauce
* 1/4 cup Sugar
* 50ml Vinegar
* 1/2 tsp Chinese 5 Spice



Combine all 4 together in a small pot and let it simmer for about 10 minutes. If it needs to be thickend sieve in Maizena, if it needs to be thinned add a bit more vinegar- and a sugar to taste.

Layer your toppings however you want. Generally I start with Onion, then Greenpepper, then Mushrooms, then Pineapple, then the cooked Chicken, then the Sweet n Sour Sauce drizzled over the top and finally the Cheese. I make sure to cover the entire surface and scatter  the topping evenly so that with every bite or so you get a bit of everything. Bake it according to the directions on your specific packaging.

Fudge Recipe

Hello all,
I must apologise for my absence, between on going computer problems and starting up my business time has slipped away.

Today is a quick post, a very YUMMY one!


Lynda’s microwave fudge


In a deep glass bowl mix:

250g butter
2 cups castor sugar
1 tin condensed milk
1 teaspoon vanilla essence
generous pinch of salt

Cook on 100% for 5 minutes
Remove and beat well with a whisk.


Cook at 50% for about *20 minutes, taking out to whisk approx every 3 minutes – you might need to make a few batches to get the time right for your microwave. When the spoon drags "tracks" through the fudge it is ready, the colour would have changed as well.

Pour into a greased square dish. Cut into pieces before fudge has cooled totally.

* you may need as long as 26 minutes
